Ollebollen: Hazel Hine

(served New Year’s Eve)

2 eggs
2 Tablespoons sugar
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
2 cups flour
1 1/3 buttermilk
1/2 cup raisins
4 large apples
powdered sugar

  1. Sift flour, sugar, baking powder, baking soda and salt.
  2. Beat eggs until light and add buttermilk.
  3. Pour this gradually into dry mixture, beating well.
  4. Add raisins and apples, chopped fine.
  5. Drop by spoonfuls into hot fat and fry 3 minutes.
  6. Roll in powdered sugar.

    I have had these! So good and right for a frosty New Year’s night! I thought it was a yeast dough, so this recipe….Happy New Year. Memory of Hazel makes me smile.
